At least something in the kitchen went right this weekend (not the flopped biscuits!)
This is my absolute favorite chili recipe. My family loves it, it has incredible flavor, and it's so quick and easy! It's adapted (quite a bit) from a recipe from Better Homes and Gardens.
Ingredients:
1 lb. bulk Italian sausage
12 oz cooked winter squash, mashed with a fork (the original recipe called for frozen, but I love fresh butternut)
1 cup salsa
2 cups white beans
1 cup water
Directions:
Brown sausage in pot (I use my 5 qt. stockpot).
Add remaining ingredients.
Bring to a boil, them simmer for 10 minutes.
Serve!
Marvel at how quick and easy that was!
I have to admit, this chili has saved my dinner-making reputation more than once.

ReplyDeleteChili and spaghetti are are whoops go to meals - I add frozen chunks of butternut squash to mine - that I cooked and froze in icecube trays but I have never made it a major player - this sounds delicious. Thanks for sharing this with us at the Hearth and Soul Hop!
